What is a good model dSLR that I won't quickly outgrow?

The D3300 or D5300 would be two great options
The image quality between those two is very similar. But the D5300 has some extra features such as a flip out screen, and more focus points
is there a difference if i also wanted to add people in the pictures

The D7100 would be the next step up and would be really nice for hiking since it has weather sealing
No, all of these cameras can photograph people or nature just fine

You could shoot in rain, but I would still recommend putting some type of rain shield over it. You can get some as cheap as $10
It's not waterproof, but it keeps moisture and dirt out pretty well.
The lenses are additional, but this one comes with a really versatile 18-140mm lens
