The 18-140mm is higher quality, but not as much zoom range

but would be sharper on focus for you
I do think the 18-200 is going to give you that added versatility you're looking for
If I were to buy a lens specifically for night skies (stars) what would be something to consider.

I would recommend a wider angle, and one with a wider aperture as well.

This is the one I'd go with
The Tokina 11-16mm f/2.8
The f/2.8 lets you gather a ton of light for those night shots, and the 11-16mm zoom range is really nice and wide to get those sweeping sky views
