would it do as well as one MKE 600?

I think two mics would do better than one because you can position them better to the speaking parties.
how close do you have to get to the SM63 mics to be heard clearly? would it also pick up lots of background sounds outside of the voices?

It shouldn't have too much background noise, if any. And how close? That really depends on how well you project your voice, but the same is said of any mic. I'd recommend no more than a few feet, which is another reason I'm recommending two mics instead of one.
ok, so if two people were sharing a mic without grabbing it, they should be picked up clearly if they are about 2 ft away?

out of curiousity, what are your thoughts about the Sennheiser MKE 400?

I'm actually not a big fan of shotgun mics in general.
ok. I was trying to get away with the minimum. not even the MKE 600?
What is your perspective on the shotgun mics in general?
James S.
Well, I feel they serve a purpose, that's for sure, it allows the ability to move around an event like, say a wedding reception or party with freedom.
That's what I do like about them. But any situation where you can get a stationary mic of better quality, I prefer to do that.
So it's up to you!
would a cardio condenser mic work for outdoor events or is it mostly for indoor recordings?

You could get away with it but I wouldn't recommend it.

would I need to have the mics you recommended on a boom stand or just a normal mic stand.

You can do either or. :-)
would this shure work as well as senheiser?

Yes. I actually prefer Shure mics.

You would need to pick up the cables and stands.
The screen on it should be okay, unless it's a windy day!
